About Blue Calm Tea
Butterfly pea, lavender and chamomile
Blue Calm brews a deep blue cup, which is the butterfly pea flower doing what it does. Add a squeeze of lemon and it turns violet in front of you. Behind the colour the taste is soft and floral: chamomile for a little sweetness, lavender for scent, butterfly pea for a mild, earthy base.
It is caffeine-free. Brew one to two teaspoons at about 90°C for three minutes. Lavender is strong, so do not over-steep it. It is a gentle evening cup on its own, and a very good one to serve to guests because of the colour change.
For a cold version, brew it strong, chill it and pour it over ice, then add the lemon at the table so people can watch it turn purple.

Why does Blue Calm Tea change colour?
The blue comes from pigments in the butterfly pea flower that change with acidity. Add lemon or lime and the cup turns violet, then pink with more juice. It is the same chemistry as the red cabbage indicator from school.
Does it have caffeine?
No. Butterfly pea, lavender and chamomile are all caffeine-free, so it suits the evening.
What does it taste like?
Mild and floral. Lavender gives it scent, chamomile a little sweetness, and butterfly pea a soft, slightly earthy base. It is not strongly flavoured, which is why the lemon works so well in it.
How do I brew it?
One to two teaspoons per cup at about 90°C for three minutes. It comes in a 50g pouch, roughly 25 cups.
